About Xian Cool Noodle

Xi'an Cool Noodle is a Shaanxi-style eatery in Cambridge's Porter Square, devoted to liangpi, roujiamo, paomo, and other Xi'an street classics. With handmade preparation, traditional recipes, and honest ingredients, we bring the true flavors of Xi'an's old streets to the Boston area.

Course 1

Tongguan Roujiamo

A flaky, thousand-layer Tongguan flatbread baked to order and stuffed with pork slow-braised for hours in aromatic spices. Crisp outside, tender within, and rich with savory juices — the iconic "Chinese burger" of Shaanxi.

Course 2

Premium Handmade Liangpi

Silky noodle sheets washed and steamed fresh every morning, tossed with wheat gluten, cucumber, and our signature chili oil. Tangy, spicy, and refreshing without being heavy — a bowl you'll crave in every season.

Course 3

Lamb Paomo

Hand-torn flatbread soaked in lamb-bone broth simmered overnight, served with tender lamb, glass noodles, and pickled sweet garlic. Warming and hearty — the most ceremonial meal of old Xi'an.

At Xi'an Cool Noodle, great flavor starts with great ingredients. We shop fresh daily, steam our noodle sheets in-house, and simmer every broth from scratch — no shortcuts, no unnecessary additives. From our glossy chili oil to our clear, rich lamb soup, every detail reflects our commitment to quality and an honest, satisfying taste of Shaanxi.
